Illinois Wesleyan omelette omelet

Back from 1993-1997, the best omelettes in the world could be found at Illinois Wesleyan University's food court cafeteria salon, Saga, or technically known as Marriott Bertholf Commons. It is my wish to be able to recreate these famed omelettes. I have had no such luck in recent weeks.

If anyone knows what egg ingredient was used, please leave a comment. I seem to remember the batter being poured from a carton.

Despite having worked there for a short time and actually using the egg-like substance you speak of to make food, I do not remember what it was called. Sorry. I'm pretty sure you are correct though in that it we poured it from a carton.
